  • 6 ounces mushrooms cremini, shiitake, or portobello, sliced
  • 3 cups cauliflower florets
  • 1 small onion chopped
  • 2 garlic cloves minced
  • 2 tablespoons olive oil
  • ½ cup vegetable broth
  • Salt and pepper to taste

(Optional) Fresh herbs like rosemary or basil, chili flakes, or a splash of coconut cream for a creamy finish

Instructions

  • Heat the olive oil in a large skillet over medium heat, then add the chopped onion and sauté for 2–4 minutes until softened.
  • Stir in the minced garlic and cook just until fragrant, about 30 seconds.
  • Add the sliced mushrooms (cremini, shiitake, or portobello) and cook for 3-4 minutes until they release moisture and start to brown.
  • Introduce the cauliflower mushrooms and continue cooking for 4–5 minutes to absorb flavors and develop texture.
  • Add the cauliflower florets, season with salt and pepper, then pour in the vegetable broth.
  • Cover and simmer on low heat for 8–10 minutes, or until the cauliflower is fork-tender. Stir occasionally.
  • Adjust seasonings, add optional herbs or a creamy element, and serve warm.

Notes

  • Allergen Alert: Check the vegetable broth you use if you have any dietary restrictions (e.g., gluten-free).
  • Special Technique: Thoroughly clean cauliflower mushrooms to remove debris from their frilly edges.
