Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 cup sliced carrots
  • 1 cup chopped celery
  • 1 can 14.5 oz diced tomatoes
  • 3 cups vegetable or chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste

Instructions
 

  • Warm the Oil: Heat olive oil in a large pot over medium heat.
  • Sauté Veggies: Cook onion and carrots for about 4 minutes. Stir in garlic and celery for an additional minute.
  • Add Tomatoes & Seasoning: Mix in diced tomatoes, Italian seasoning, salt, and pepper. Sauté briefly.
  • Pour in Broth: Bring to a simmer for about 5 minutes.
  • Cook the Pasta: Stir in ditalini pasta and cook for 8–10 minutes, or until al dente.
  • Finish Up: Adjust seasonings, add optional ingredients like spinach or Parmesan, and serve hot.
