Ingredients
  

  • 1½ to 2 pounds chicken breasts or thighs, cut into bite-sized pieces
  • 2 to 3 jalapeños seeded and finely chopped
  • 2 cloves garlic minced
  • ½ cup onion finely diced
  • 3 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 2 tablespoons vegetable or olive oil divided
  • Salt and black pepper to taste
  • 1 tablespoon cornstarch optional, if you want a thicker sauce

(Optional) Green bell peppers, fresh cilantro, honey, etc.

Instructions
 

  • Make the Marinade: In a bowl, whisk soy sauce, lime juice, 1 tablespoon oil, garlic, onion, and jalapeños. Stir in cornstarch mixed with water if you want a thicker sauce.
  • Marinate the Chicken: Place the chicken in the marinade, ensuring each piece is coated. Cover and refrigerate for at least 15 minutes, up to 4 hours.
  • Heat the Pan: Warm the remaining tablespoon of oil in a large skillet over medium-high heat.
  • Cook the Chicken: Sear the marinated chicken in the hot pan for about 2–3 minutes per side. Reduce heat, add leftover marinade, and simmer until the chicken is fully cooked (165°F).
  • Serve & Garnish: Plate the chicken and sauce, and add optional toppings such as cilantro or diced green onions.

Notes

Always ensure chicken is cooked to an internal temperature of 165°F for safety. Adjust the number of jalapeños to match your preferred spice level.
