Ingredients
  

  • lbs chicken wings separated into flats and drumettes
  • 1 tbsp aluminum-free baking powder
  • tsp kosher salt
  • 1 tsp freshly cracked black pepper
  • 1 tsp garlic powder
  • Zest of 2 lemons about 1 tbsp
  • 2 tbsp unsalted butter melted
  • 1 tbsp fresh lemon juice

Optional Ingredients:

  • 1 tbsp honey for honey lemon pepper wings
  • ½ tsp smoked paprika for a smoky touch
  • Pinch of cayenne for added heat

Instructions
 

  • Preheat oven to 425°F and line a baking sheet with foil. Place a wire rack on top.
  • Gently blot the chicken wings with paper towels until they’re completely dry.
  • Mix dry seasoning: Combine baking powder, salt, pepper, garlic powder, and lemon zest in a bowl.
  • Coat the wings in the seasoning blend, tossing them gently until every piece is evenly covered.
  • Arrange on rack, skin-side up, leaving space between each wing.
  • Bake for 20 minutes, flip, then bake another 15–20 minutes until crispy and golden brown.
  • Prepare sauce by mixing melted butter and lemon juice (add honey or cayenne if using).
  • Toss hot wings in the sauce and serve immediately while they’re crispy and flavorful.

This recipe uses a simple baking powder technique to achieve extra crispy skin—no frying required.
