Ingredients
  

  • 1 lb boneless skinless chicken breasts, cubed
  • 1 tsp kosher salt
  • ½ tsp ground black pepper
  • 2 Tbsp olive oil
  • 4 garlic cloves minced
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • ½ cup sun-dried tomatoes oil-packed, drained and sliced
  • 1 tsp Italian seasoning
  • ¼ tsp crushed red pepper flakes
  • ¾ cup freshly grated Parmesan cheese
  • 12 oz penne pasta
  • ¼ cup fresh basil sliced

Optional:

  • 2 cups baby spinach
  • 1 cup sliced mushrooms

Instructions
 

  • Season chicken with salt and pepper. Sear in olive oil until golden and cooked through. Set aside.
  • Sauté garlic in the same pan for 30 seconds.
  • Add broth, cream, sun-dried tomatoes, Italian seasoning, and red pepper. Simmer for 4–5 minutes.
  • Boil pasta until al dente. Drain, reserving ½ cup pasta water.
  • Stir chicken and Parmesan into the sauce.
  • Add pasta and toss gently to coat. Use reserved water to adjust consistency if needed.
  • Stir in fresh basil. Add optional spinach or mushrooms if using. Serve warm.

Notes

For the creamiest results, use freshly grated Parmesan and avoid boiling the sauce too hard once the cream is added. Great with short pasta shapes like penne or fusilli.
