- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 cup shelled pistachios chopped (divided)
- ¾ cup milk dairy or nondairy
- 2 large eggs
- ⅓ cup vegetable oil or melted butter
- 1 teaspoon vanilla extract

Preheat & Prepare – Set the oven to 350°F (175°C) and allow it to heat fully. Line a 12-cup muffin pan with paper liners or lightly grease each cup to prevent sticking.
Mix Dry Ingredients – In a large bowl, combine flour, sugar, baking powder, and salt, whisking well to distribute everything evenly. Stir in half of the chopped pistachios for added texture throughout the muffins.
Blend Wet Ingredients – In a separate bowl, whisk together milk, eggs, oil, and vanilla extract until the mixture looks smooth and fully combined.
Combine Wet & Dry Mixtures – Make a well in the center of the dry ingredients and slowly pour in the wet mixture. Using a spatula, gently fold the batter just until no streaks of flour remain—be careful not to overmix.
Fill Muffin Cups – Divide the batter evenly among the muffin cups, filling each about three-quarters full. Sprinkle the remaining chopped pistachios on top for extra crunch and visual appeal.
Bake & Check for Doneness – Place the muffin tin in the center of the oven and bake for 18–22 minutes. The muffins are ready when the tops turn golden, and a toothpick inserted in the middle comes out clean or with just a few crumbs.
