Ingredients
  

  • 1 large English cucumber chopped into bite-sized chunks
  • 4 Roma tomatoes chopped into medium cubes
  • ½ small red onion diced
  • ¼ cup fresh parsley finely chopped
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon sea salt or to taste
  • ¼ teaspoon black pepper

Optional Add-ins:

  • Crumbled feta cheese
  • Diced avocado
  • Chickpeas
  • Fresh basil or dill

Instructions
 

  • Rinse and dry all produce.
  • Chop cucumber and tomatoes into chunks, dice the onion, and finely chop parsley.
  • In a large bowl, whisk olive oil, lemon juice, salt, and pepper.
  • Add veggies and herbs to the bowl and gently toss.
  • Taste and adjust seasoning if needed.
  • Serve right away or let sit for 10–15 minutes to deepen flavor.

Notes

For the best texture, wait to add salt until just before serving.
