  • 4 –5 medium Russet or Yukon Gold potatoes sliced thin
  • 2 cups shredded cheddar cheese
  • ¼ cup chopped chives
  • 3 large eggs
  • 1 cup milk
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F (190°C) and lightly grease your baking dish.
  • Arrange half of the sliced potatoes in the dish. Top with half the chives and half the cheese.
  • Repeat with remaining potatoes, chives, and cheese.
  • Whisk eggs, milk, salt, and pepper in a bowl; pour over the layers.
  • Cover with foil and bake for 30 minutes.
  • Remove foil, increase temperature to 400°F (200°C), and bake 15–20 minutes more until golden and bubbly.
  • Let it rest briefly before serving.
