Ingredients
  

  • 2 cups long-grain white rice
  • 3 cups low-sodium chicken or vegetable broth
  • 2 tablespoons olive oil
  • ½ cup yellow onion finely chopped
  • 2 garlic cloves minced
  • 1 teaspoon ground turmeric
  • ½ teaspoon paprika
  • ¼ teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 bay leaf

Optional Add-Ins:

  • ½ cup frozen peas thawed
  • cup raisins
  • Fresh parsley or cilantro chopped

Instructions
 

  • Rinse the rice under cool water until clear; drain well.
  • In a saucepan, heat olive oil over medium heat. Sauté onion for 2–3 minutes, then stir in garlic for 30 seconds.
  • Add turmeric, paprika, cumin, salt, and pepper; stir for 30 seconds to bloom the spices.
  • Add the rice and stir it for about a minute to lightly toast and coat it with the spices.
  • Slowly add the broth and place the bay leaf into the pot. Bring to a gentle boil.
  • Cover, reduce heat, and simmer for 16–18 minutes until liquid is absorbed.
  • Remove from heat. Let it rest covered for 5 minutes.
  • Once cooked, fluff the rice gently with a fork and mix in any optional extras you’d like. Serve warm.
